Please, no more Italian!

Seems like all I get is Italian openings. There are a hundred other white openings I would love to test my skills on. Is there some way I can get a game where certain openings or sequences are either forbidden, or maybe required?

Well, you can play 1... c5. That will prevent your opponent from being able to play the Italian against you. Or, if you don't like that, perhaps 2... Nf6. Or lots of other choices!
At any given time, there tends to be a thematic tournament where the opening is predetermined
Cosa vuol dire "mai più"? Più sono, meglio è! !

Move out of 1... e5, and test other options. You avoid the Italian and may end up finding a defense that suits you better.
If you want to keep on 1... e5, try 2... d6, or as @corvusmellori suggested 2... Nf6, and you may find a way to avoid the Italian.

Here on lichess? My experience so far is exactly the opposite: unlike in OTB games, e4 e5 openings are a minority on lichess and Italian is even less frequent.
There are but two openings with hair on their chests and a wild gleam in their eyes, if you are playing black:

1) 1...c5 The Sicilian (in response to 1 e4);

or

2) The Hippo (which may start with any of several different moves, although 1...e5 typically is not one of them, against practically any move by white).

Oh, the Hippo. What a glorious, lovely opening. If it were a cereal, it would be the good raisin bran. If it were a beverage, it would be the elegant Guatemalan coffee. If it were an automobile, it would be a sensible hybrid. If it were a politician, it would be hounded in court by political opponents who could not otherwise compete. If it were a poster, it would know when to stop.

Clearly, I am not the Hippo.
